David Manning packed a lifetime of experience in hospitality before jumping into the perils of winemaking. In '96, tired of the long hours of hospitality management, he commenced working as a casual at Houghton's cellar door. Nine years later, having risen to manager of on-premise sales and marketing, he secured a similar position with Negociants. He subsequently moved to Melbourne for Negociants and completed an agricultural science degree, majoring in winemaking/viticulture. In '17 he left Negociants and commenced a permanent position with the winemaking team at Ten Minutes by Tractor in January '18. David has no plans for a winery or cellar door for his own micro-brand of Caviste, simply a desire to increase the quality of the wines. -JAMES HALLIDAY
